I have read about this, the skim your card and then use it later on and it has been used many times before you received your statement and can do anything about it.

In this country you have to give over your card and they go away with it and bring it back to you, it would be an idea to see if restaurants would change their policy.

Usually when I hand over my card I go with it and ensure that it is not been used illegally.
