so does paypal just give them the $25? or do they enter into my bank account and take the $75
i have always been curious what happens here, as from a buyers side i want to know just by transfering funds out can the seller avoid the process of disputes which is quite a loophole

Read your PayPal agreement carefully. PayPal will attempt to obtain the money you owe them via your registered bank account. If they cannot obtain the money that way, they will restrict your account and hound you for the money. If the amount is large enough, they will give it to a collection agency who will go after you.
Also, in card not present transactions for virtual goods, the merchant loses 99.999% of the time. Creating an invoice is useless and will not help you at all.
